The day I don't have to feel guilty for feeding my family pancakes for dinner! Yay! Last year I think I made America's Test Kitchen pancakes which are pretty good, but I had forgotten about my pancake recipe (its even better!). I can't even remember where I got this recipe, but they are awesome! Kara is the one who reminded me how good they were. So, in honor of National Pancake Day, I thought I'd post the recipe on the ole blog for posterity (and the rest of you!).
Blueberry (or not) Buttermilk Pancakes
2 cups all purpose flour
1/4 cup sugar
1/2 tsp salt
2 1/4 tsp baking powder
1/2 tsp baking soda
2 large eggs
2 cups buttermilk
1/4 cup unsalted butter, melted
1 cup blueberries (optional)
So, the original recipe calls for mixing wet and dry separately and then combining them. The problem with that, two bowls to clean! So, this is my cheat and it works for all kinds of things.
Melt butter in your big bowl in the microwave. Add in sugar, salt, baking powder, soda, and eggs. Wisk that up real good. Then slowly pour in buttermilk, wisking as you pour. Now, put your wisk in the sink and get out a rubber spatula. Put in your two cups of flour and fold/stir until combined (don't stir too much though!). Now, just cook like you do pancakes, putting in blueberries/chocolate chips/whatever you like right after your pour the batter on the griddle.

We had these - this morning!!! I LOVE these pancakes and every time I make them for others I get tons of compliments! I also hate to get 2 bowls dirty so I have my main bowl I measure out the flour, baking soda, baking powder, salt and sugar, whisk that up to combine and then I melt my butter in a mug and in my glass measuring pyrex I measure the buttermilk whisk in the eggs and add the butter and then I lightly combine those wet with my dry ingredients with a spatula. I use half whole wheat half white flour each time I make them and they are DIVINE! I also love them with my buttermilk syrup: in a large pot you combine 1 stick of butter, 1 cup of sugar, 1 cup of buttermilk, 2 T of corn syrup, 1/2 tsp of baking soda and whisk it up really good over medium - medium high heat for about 7 minutes once it starts to boil (you need the large sauce pan because it bubbles up super high and I've had plenty of not so fun boil overs). Take it off the heat, add in 1 T of vanilla - delicious! It is a super yummy caramel flavored syrup and is my family's favorite! We keep the leftovers in the fridge and heat up the next time we make pancakes!
Kara, you are evil, EVIL I say! I was hemming hawwing make the syrup, not make it. Darn it I made it and its awesome! My kids said its the best syrup they've ever tasted and it was better than junk syrup (Mimi & Poppa's HFCS filled syrup)! Thankfully I just made half a batch so there won't be gobs left for me to drink (haha)!
