Looking for Pumpkin Bread...
as good as Barbara Jean's! Anyone got anything for me? I made a Martha Stewart pumpkin cake recipe today but really it was just like a pumpkin bread, really dense (its pretty good though especially with a thin layer of cheesecake flavored cream cheese). I'm wanting something nice and light and fluffy. And, how does Barbara Jean get that nice thin brown crust on top?

Barbara Jean's is awesome! I do have a Pumpkin Bar recipe that I like:
Beat til fluffy:
4 eggs
1 2/3 c. sugar
1 c. cooking oil
1 can of pumpkin (appx. 15 oz)
Add:
2 c. flour
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
1 tsp baking soda
spread into ungreased 15x10x1 pan cook at 350 for 25-30 min. once cooled you can frost with cream cheese frosting...
frosting:
8 oz block of softened cream cheese
1/2 stick of butter
1 tsp vanilla
2 c. powdered sugar
mix it all together (yum!)
Kara, is this one light and fluffy? And, do you think I could sub some applesauce for some of the oil? I don't like to put 1 cup of oil in anything (even in something that makes a humongous batch - it just freaks me out!).
Oh, and the pumpkin cake/bread I made yesterday is really pretty good, especially if I smear a little cheesecake flavored cream cheese on my slice!
I think it is light and fluffy - and I don't know about the oil, I guess you could try it and see how it would do.
Super Moist Pumpkin Bread
Ingredients:
1/2 stick unsalted butter
1/2 cup sugar
1 large egg
1/2 cup canned pumpkin
1/4 cup nonfat, plain yogurt
1/4 cup honey
1 teaspoon vanilla extract
1 cup flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
Preheat oven to 350°F. Spray a bread pan with nonstick cooking spray.
In the bowl of an electric mixer, beat together the butter and sugar on high speed until smooth. With the mixer on low speed, add the egg and combine. Add the pumpkin, yogurt, honey and vanilla and combine until smooth.
In a separate bowl, combine the flour, baking powder, cinnamon, salt, ginger and allspice. Fold this mixture into the pumpkin mixture and combine until smooth.
Pour into the prepared pan and place in the center of the oven. Bake for 45 to 50 minutes or until a toothpick inserted into the center comes out clean.
All right, Aunt Kathy, where is the recipe from? Have you made it before? Can you promise me light and fluffy pumpkin bread?
I am truly insulted that you do not believe I know how to make delicious pumpkin bread! I did a search on the internet, and since it had alot of weird ingredients in it, I figured you would like it.
You will just have to try it for yourself and see!
